Found a wonderful salad green in France called mache. Looks a little like cress, but has a much sweeter flavor. The plants are very tiny and are eaten whole, sometimes even with the very delicate roots intact. An old dictionary translates mache as corn-salad or lamb's lettuce. Are seeds available in the US?
