I started some Golden Globe artichokes last summer and they did great. They survived the winter so this spring I tried to seperate the new rooted shoots from the parent 'tuber'. I destroyed the parent tuber in the process. Did I do the right thing? Should I just leave the whole thing alone?

Artichoke plants can be divided, and roots with some green stem can be replanted, but the plants shouldn't be divided every year. Leave the plant alone next year, and plan on dividing only every 3-4 years, when stems become really crowded and you canidentify new plants growing beside the parent plant.
