we had one of the best crops from our lettuce but now it is about 4 ft tall and starting to seed and the top can we use them next year also the same thing has happened to the bok choy

Lettuce seeds can be collected and saved. They are tiny so it will take some work: allow the plant to produce a seed stalk. After the plant blooms and the flower forms a miniature "dandelion head," gather the seeds. Separate the seeds from the chaff by rubbing them with your fingers. Store in a cool, dry place for planting next season. Same with bok choy.
