How can I tell when Sun flowers are ready yo pick??

When sunflowers begin to mature the heads will droop down towards the ground and the backs of the heads will turn from green to a light tan. You can cut the heads from the stalks at that time and then set them on newspapers (face side up) in a dry, airy place such as a shed or garage. When they are completely dry the heads will begin to warp out of shape and the seeds should pull out easily.
