I would like your advice on what spinach to buy for high yield for canning.

Spinach likes to grow in the fall or early spring. If the weather gets too hot, it will bolt. Try Burpee's 'Avon Hybrid' or 'Bloomsdale Long-Standing'. They will mature in 45-50 days and be at the peak of flavor before the hot summer weather hits.
