How much of the bulb/stem on my elephat ear plants should I cut off before storing

You can cut off all the stem(s) and attached leaves, leaving about an inch of the stem attached to the tuber. Allow the tuber to dry and then store it in peat moss in a cool place such as an unheated basement or in a garage if temperatures do not drop below freezing.
