Winter weather in Central Texas will dictate which plants will perform in your garden after the month of October. Ornamental kale, pansies, primroses, cyclamen and snapdragons are the most cold tolerant. Early flowering bulbs such as grape hyacinths and crocus are also good choices, but they need to be planted in late summer so they can establish their roots prior to blooming. Aside from the above, there aren't many reliable plants for you to add to your garden for winter bloom. Wish I had more suggestions!
