I know that I want to plant holly in front of my house. The house faces the east. What type of holly do you suggest? I've seen several different types that range in full grown size from 10 to 12 feet. This seems too large.

Inkberry (Ilex glabra) grows to a height of 6 to 8'; it prefers partial shade and so should do fine on the east side of the house. Larger hollies can be pruned annually to help keep them to a manageable size.
