My plants had berries when I planted them. They dropped off and did not produce berries the next winter.

Hollies are either male or female. If your plants had berries, they are females but you will still need a suitable male in your yard for more berries to form. Try to find the male counterpart for your particular hollie (for instance Blue Girl needs Blue Boy, China Girl needs China Boy). Once you have a male plant, your females should produce berries.
