Water won't hurt the cauliflower so just let the plants grow, rain or shine. Blanching refers to keeping the cauliflower head white because it tends to turn a little yellow in the sunlight. To blanch, wait until the head begins to enlarge, then pull the outer leaves over the head and tie them with a rubber band or soft twine. |
