Hello,
I read where you blanch the cauliflower head to protect it from water. What do you do when it rains? If it gets humid?

Water won't hurt the cauliflower so just let the plants grow, rain or shine. Blanching refers to keeping the cauliflower head white because it tends to turn a little yellow in the sunlight. To blanch, wait until the head begins to enlarge, then pull the outer leaves over the head and tie them with a rubber band or soft twine.
