Do all oakleaf flowers turn pink with age? What about the cultivar 'Snow Queen'? Does Home Depot have a listing of the plants they will carry in the different zones?

Yes, all white flowering oakleaf hydrangea flowers change to dusky rose-pink as they age. Snow Queen included.

I can't supply you with a plant list but if you phone your local Home Depot garden center, they can tell you if a specific plant is in stock.
