Answer: Now that your asparagus has been in the ground for a year you can begin harvesting. Harvest only a few spears and only those that are at least as thick as a pencil. Allow the rest to develop ferny foliage, which will feed the roots and help the plants produce even more and even thicker stems next season. By next year your plants should be fully established and you can harvest even more spears. To keep your plants healthy, cut back the dead foliage in the fall and mulch heavily with compost. Remove the mulch in the spring when new shoots appear.
