Our rhubarb plants (second year) have all gone to big seed heads. Why?

It's normal for rhubarb plants to form flower stalks. Simply cut these stalks off as they appear, so the plant can direct its energy to leaf and root growth. You can begin light harvests the second and third years; after that, harvest as you like.
