what type of inexpensive grass seed would you recommend for a former horse coral that was covered with wood shavings that is a good slope & is in lots of sun

If you simply want a grassy plant with no mowing or other maintenance required, consider Orchard Grass (Dactylis glomerata) or Barnyardgrass (Echinochloa crus-galli). Both are a common component of wild flower mixes in your state and they grow tall. If you want something a little more civilized, something you can mow, use turf type tall fescue or bluegrass.
