how do I kill poision ivy or oak without harming my azaleas or other plants?

Other than cutting the poison ivy/oak down and starving out the roots, there's really nothing selective enough and powerful enough to kill just the undesireable plants growing in and amongst your shrubs. Cut it down and keep cutting down any sprouts that come from the roots and eventually the roots will run out of energy and die. If you attack the plants in the winter, and wear protective clothing, you should be able to remove most of the growth without becoming victim to it. Good luck with your project!
