| Hellianthus tuberosus, Jerusalem Artichokes, also known as sun chokes, are grown from tubers. The plants grow 6'-7' feet tall, with bright yellow flower heads. It spreads readily and can become invasive unless the tubers are harvested every year and only a few are replanted.
