this spring I saw bark peeling off the main trunk and support branches of my shrubs, looking much like birch bark does...could this be due to some disease?

It depends on the shrub. Some cultivars show peeling bark and others do not. Sometimes winter weather can cause the peel. As long as the shrubs look otherwise healthy and are putting out new growth, the peeling bark is nothing to worry about. Best wishes with your landscape!
