its very healthy but the hundreds of figs are very dry inside

There are only a few reasons for dried fruit - insufficient water during fruit production (probably not - if your tree is healthy), or insect damage. There's a dried fruit beetle that can cause what you describe. For positive diagnosis, take a few samples of the affected fruit to your local cooperative extension office or Master Gardener Clinic. Hope it's nothing serious!
