Coleus plant leaves are being eaten away leaving only stems?

Sounds like snails or slugs. They consume large amounts when they feed and they feed mostly at night or in the early morning. Look for silvery slime trails in and around your coleus or go out at night or in the early morning to see if you can catch the critters at work. If you do, you can hand pick the pests to remove them from the garden or you can use one of the iron based snail and slug baits (Sluggo or Escargo). Best wishes with your coleus!
