I planted two alstromeria in early March. They get full sun to part shade. In the last month, the plants' stems have turned yellow and are wilting. What should I do?

If your Alstroemeria are Ligtu hybrids and have bloomed, then it's natural for the foliage to die down. New leaves and stems will appear after the plants have had a chance to rest. Alstroemeria don't like to be disturbed once they become established, so just leave your plants where they are and continue to water them regularly. They'll develop new leaves and shoots where they're ready.
