I didnt know they get much height Can I pot them? and then the pot into the soil?

You can keep a Mexican fan palm in a container and keep it small for a few years, but eventually the roots will either break through the container or the tree will die because the roots are confined. Enjoy it while you can but plan to eventually plant it in the ground or give it to a gardening friend who has room to plant it in the yard.
