I have cut back my ornamental grasses in past years but have two in front (one is a Pampas) and wonder what will happen if I do not cut them back?

Not pruning them back will allow them to grow much larger this year. The dead foliage will be covered up by this year's new foliage so you won't notice it. The only future problem is that eventually you will need to trim them back and they may be more difficult to prune if you have to remove several year's worth of growth.
