Can any type of food like rice or lettuce be composted?

You can compost kitchen waste as long as it does not contain animal fat, bones or meat. Rice and lettuce are fine, as are carrot and potato peels, coffee grounds, egg shells, etc. Just keep meat products and meat by products out and your compost pile will remain healthy and nuisance pest-free.
