Can the root of a flowering ginger plant be used in cooking?

True ginger, Zingiber officinale, is a plant that grows from a rhizome, which is used in cooking. You can start ginger plants from ginger rhizomes you purchase in the store by cutting them into 1 or 2 inch pieces, letting the cut areas callous over, and planting them in soil. The resulting plant with grow 2-4 foot long stems with bright green leaves and will flower in the summer. You can harvest the roots at any time to use in cooking.
