If my asparagus set past the eating stage, do I leave the stalk or would I be better off breaking off the adult stalk? This is while it is producing edible stalks.

Definitely leave the stalks in place! As they grow, they store carbohydrates in the crown of the plant, helping it grow larger so it'll produce more spears for eating next spring. Enjoy!
