Question: what would be the pros/cons of varnishing a box inside and out (for vegetables)

Answer: If you want to help preserve the wood, I'd recommend you use linseed oil rather than varnish. It is food grade and is best for veggie gardens. Varnish on the outside would work for a while but the constantly damp soil will eventually blister the varnish so you cill need to sand and reapply every few years. Hope this answers your question.
