I recieved my tomatillos plants a couple of days ago and I'm unsure of how to position them in my garden. Do they need to be staked and or caged? How big do they get? How far apart should they be planted? Should I pinch off new leaves once the major stems form?

Tomatillos are vigorous viners like tomatoes, only more so! I suggest using a cage or a trellis net to keep them in bounds. Plant them 2-3 feet apart. You can pinch them as you do your tomatoes, but wait til they have put on several branches to ensure good yields. Enjoy your homemade salsa!
