I have a pineapple guava with a main trunk and a another trunk at the base, just as thick as the main one. I want to shape it into one main tree w/ a ball on the top. Is it okay to do the trim? When should I trim it? Also, fertilize?

You can prune off the second trunk but I would wait until this winter when the plant is not actively growing. Otherwise you may get suckering growth that you will have to continually remove. Your guava won't need feeding unless the growth is poor or the leaves are pale in color.
