When is the proper time to harvest gooseberries?

Gooseberries ripen in mid- to late July. The berries of some cultivars turn from green to pink when they're ripe, but others remain green, so don't let berry color guide you. Expect the ripe berries to be tart-sweet, with a texture like grapes.
