Question: What is best way to prune these overgrown 12' shrubs down to 6-8'

Answer: You can safely prune off about one third of the shrub in any annual pruning session. If you take off more than that, the shrub could be stressed enough that it won't leaf out again. If you need to remove more than one third, plan on reducing its size over a 2-3 year period. Best wishes with your viburnum!
