How do you cut basil, parsley, etc. so you can use them for salads, cooking?

You can simply snip basil leaves off one at a time or cut an entire stem with several leaves attached. Same with parsley, although with parsley, take the entire stem down as far as possible. Parsley develops new stems and leaves from the crown of the plant at soil level; basil will develop new stems just below where you harvested. Hope this clarifies things for you.
