Should I cut them back after the blooms are done? If yes, what would be the correct way to do this?

After they have finished flowering, forget me nots will die down to soil level. They bloom best in cool weather so when weather begins to warm they will die out. If you cut off the spent flowers they may bloom a second time - if the weather remains cool. Just use garden shears and cut the spent flower stems down. Best wishes with your garden.
