the new growth of leaves on my squash plants are turning a lite green to yellow in color. Could this be due to the recent rains or lack of nitrogen in the newly mulched soil?

I think the problem is related to the excessive rain but you can feed your plants with a foliar fertilizer (such as Miracle Gro) to help them green up faster. Best wishes with your squash plants!
