Answer: Shallots mature about five months after planting so if you planted in February or March, they should be ready to harvest in July or August. If the tops don't begin to yellow then, bend them down toward the soil to stop the sap from flowing. When the tops begin to turn brown, carefully dig the bulbs and leave them to dry in the sun. When the outer skins are dry, wipe off any soil and cut the tops off. Then store in a cool, dry place for up to 4 months.
