What should I do with the not-so-pretty flowering stalk that remains on my phlox after they flower?

You can cut the flowering stalks back as far as you like, but if you only cut down to the next lower side branch or group of leaves, you will likely get a second flush of flowers. I do think this practice helps the appearance of the plant as well. Good luck.
