You can find a list of plants, trees, and shrubs that are somewhat resistant to moose browse in the July 2004 issue of Under the Canopy, the Forestry and Forest Products Newsletter of the Alaska Cooperative Extension Service. I know that moose generally leave the following plants alone: Columbine, Larkspur (Delphinium), Foxglove, Iris, Narcissus, Monarda (Bee Balm), Monkshood, Bishopsweed, Asiatic and Oriental Lilies, and Day Lilies.
