I see the leaves of my knockout rose bushes are full of little holes, what is causing this and what can I do to treat them?

Sounds like some little insect pest is feasting on the leaves. But, without knowing which one, I can't really recommend a control. There are several systemics on the market formulated for roses, or you can simply prune your plants back to remove most of the holey leaves. Best wishes with your roses!
