My Japanese Cherry Tree has grown very tall and is now out of shape (form). Can I trim the sides and the top of it now, this time of the year?

It is generally best to prune during the late winter and early spring, if indeed pruning is done at all. In many cases, pruning will stimulate even more growth! This is a job to be done with great care and skill, especially on a larger and highly ornamental tree such as this. To be honest, I would suggest you consult with a professionally trained arborist rather than tackle this yourself.
