growing spinach - Knowledgebase Question

my new spinach plants[5 inches tall] have a large stem of seeds growing out the center of the plant about 4inches above the plant itself. what is it &what should i do?

Spinach grows best in the cool weather (early spring and early fall). What you describe sounds like a flower stalk and means your spinach is bolting because of warm weather. You can try cutting down the flower stalks but generally, once it appears, the spinach will have lost its tenderness and flavor and won't be worth harvesting. Try planting again in late summer for an early fall harvest, or in the very early spring so you can harvest it before June. Best wishes with your spinach!
