Can you replant annuals in pots with soil from last season? The old plants need to be pulled, but there are mushrooms in pots, will it be okay to remove, mix in some new soil and then plant or should soil be discarded with old plants? Thanks for the help!

You can recycle your old potting soil. Just dump it out, spread it out, mix in some new potting soil, wet it all down and mix it together. Then place it in your containers and plant your new plants. Best wishes with your new plants!
