My zucchini makes me break out really bad when I get around it to trim or pick. I get red blotches, but as soon as I get away and wash off they go away.

It is not unusual for someone to have a temporary reaction to certain plants. Those with prickles on the leaves or stems like zucchini can be especially irritating. I would suggest you wear long sleeved shirt and gloves. Your practice of washing with soap and cool water when you're done is soothing to the skin and a good idea too.

I have never heard of zucchini causing dangerous allergic reactions. However, if the reaction gets worse, or causes swelling of your hand or arm, you should contact a doctor for advice on allergic reactions.
