My Bok Choy is not getting big at the base. Instead it's beginning to flower at the top and growing tall. What shall I do?

Bok Choy, or Pak Choy, is a type of Chinese cabbage that is also know as celery-cabbage, because of the ribbing on the stems of the leaves. Bok Choy is a cool-season crop that will bolt, or go to seed, if the weather is too warm. It may be too late for you to harvest and enjoy eating the leaves of your Bok Choy, but you can save the seeds and plant them in the late summer so they can grow and mature in the cooler months of autumn.
