I have an olive tree that looks more like a bush than a tree. Can I prune it into a tree and if so when is the best time to do it?

Left to their own devices, olive trees will become shrubs so pruning and training while they are young is a good idea. Remove all of the branches growing along the trunk, up as high as you want the canopy to begin. Make clean cuts and try not to damage the bark of the trunk. You can prune now.
