Your herbs should be trimmed back on a regular basis. I usually cut them back by a third or a half. Even if you don't plant to use the herbs every week you should still cut the plants back a little. The herbs you harvest can be dried and saved for later use, or you can use them immediately. Wait a week after cutting your herbs back and then repot them. Scallions can be harvested at any stage in their development. They will have the same flavor, they will just be little if you harvest early. The tops are generally twice as tall as the root is long. When the tops of my scallions are 12-18" long I know the root will be at least 6" long. You can pull one of yours up to see how they size up. If they are too small wait a few weeks and pull another one. Eventually you'll be able to figure out how fast they are growing. Enjoy!
