Would I be able to cut the flowers from an Endless Summer Hydrangea without risk of damaging the plant for future growth?

You won't hurt the plant at all by cutting the flowers to take indoors. In fact, Endless Summer hydrangea flowers freely all summer and it flowers on new growth. The more flowers you cut, the more new growth the shrub will develop and the more new flowers it will produce. Enjoy!
