Harvest as soon as roots reach 1" to 1 1/2" for sweetest flavor. Radishes reach maturity in about 3 to 4 weeks but will bolt (send out a flower) when they are over-mature. So, check to see their progress by gently brushing away the soil just above and look at the shoulders. Or, pull one up to see how big it has grown. You can eat it, no matter its size. Enjoy!
