To dry and store catnip, harvest the leaves in the late summer, when the plant is in full bloom. In the morning, after the dew has dried from the leaves, snip the leaves and lay them out on paper towels to air dry. Don't leave them in the sun or they'll lose some of the flavor and natural oils. When the leaves are fully dry and crispy, pull them from the stems and crush them between your fingers. Discard the stems and place the crushed, dried leaves in an airtight container and store a cool, dark location.
