The flower heads on regular garden-variety sunflowers are not suitable for drying; the heads twist and turn as they dry, to release the seeds. They won't dry well, but if you'd just like to enjoy sunflowers as a cut flower, try planting the smaller varieties such as 'Lemon Eclair' or 'Elf', both available from Burpee's.
