What could be eating the leaves of my green beans, yellow squash, cucumbers and broccoli? It leaves the stem untouched. It leaves no footprints as deer would.

Woodchucks will eat just about anything you put effort into growing, and may not leave prints on your soil. If you want to track the critter, spread flour on the soil surface to capture the footprints. This is also useful for tracking slugs, which can, in sufficient numbers, defoliate plants in the way you've described.
