The Q&A Archives: Harvesting Potatoes

Question: I planted about 25 potatoes sprouts on March 15, 1998. Tthey are about 18" high now and the leaves are green. When will they be ready to dig out? How can I tell if they are ready?

Answer: Potato plants will flower and form large green seed capsules, indicating they are beginning to develop tubers.. When they're finished flowering, you can dig small 'new' potatoes. If you want fully mature potatoes, wait until the tops turn yellow and die down. Then carefully dig your potatoes for storage.
